Apples, fingerling potatoes, onions, leeks, garlic, and winter squashes such as butternut, delicata, and acorn squashes are beginning to appear!

Many of these cops can be stored in a cool, dry place for months, so now is the time to build your winter stockpiles of food in the cellar! Winter squashes such as butternut and acorn squash will last for upwards of six months in a cool, dry location (45 to 50 degrees). Basements or garages work great for storing your winter squash. It is so nice on a cold snowy day in January to make a butternut soup with a squash that you have stored from the market... it will remind you of those sunny, warm September days!

According to the University of Illinois’s agricultural bulletin, the large hard rind of most winter squash can be stored up to six months. The smaller acorn and butternut squashes do not store as well, only up to 3 months. Refrigeration is too humid for whole squash, and they will deteriorate quickly in the fridge. Also, warmer storage temperatures simply mean shorter storage time. Remember... find a cool and dry place to store your squash!

For more information on how to cut, prepare, and store winter squash, check out the University of Illinois website
http://urbanext.illinois.edu/veggies/wsquash.cfm

At the Torrington Saturday Market, Garlic Head’z has returned, as well as the lettuce from Maple View Farm!
